Weekend Menu II
Another week has gone by and things are not looking like they are slowing down at all. This weekend starts the graduation season frenzy… graduation ceremonies, parties, a lot of sitting, and again, not a lot of free time.
For the menu on Saturday, I am looking at food to sustain you… those graduation ceremonies can get long and a rumbling tummy would be too distracting. You want to arrive well fed so you are able to sit through the pomp and circumstance without having to sneak snacks out of your purse. This is why Saturday’s lunch is featuring a Giada de Laurentis dish, Chicken in Lemon Cream Pasta. It is a rather filling meal for lunchtime, but the goal is to tide you over until the post graduation parties begin. As a side, why don’t you try Roasted Asparagus. This recipe is very easy, and so good it will be your go to asparagus recipe from now on.
Sunday brings us to Mother’s Day…. a day where mothers of the world are celebrated for their endless amount of selfless giving to their families. Since you are such a resourceful mom, sneakily (with a big Hint! Hint!), give your kids this recipe for Monkey Bread Minis and breakfast can easily be taken care of by them. I am not going to even share a lunch or dinner recipe with you this weekend. We all know that even if our kids or spouses do all the cooking for us today, we will still end up with kitchen clean up duty in the end. Today is the day to put a Kitchen Closed sign up and have them take you out to your favorite restaurant. Savor in the one day you have to celebrate motherhood then come back home for dessert… (which you can make ahead on Saturday, so technically, not Mother’s Day). Strawberry Cheesecake Ice Cream. Even if there is a mess to clean up, it will seem well worth it after tasting this rich and creamy dessert.

The roasted asparagus sounds delicious! We’re vegetarian, so I’m hoping you’ll offer some veggie meals on occasion.

Laura, I can attest to the asparagus’ deliciousness. Even my picky eater likes it.
Of course, I honed right in on the Monkey Bread Minis and the Strawberry Cheesecake Ice Cream. They look divine.
Although the final direction in the recipes should be, instead of eating, “apply directly to waist” (or hips, or thighs, or whatever your “favorite” area is!)
Oh, my! I have to make those minis!
