Weekend Menu III

Well, today it finally hit me that swimsuit season is right around the corner. After a night out with the hubby and talking about vacation plans for the summer, I can no longer deny the fact that this body of mine is not even close to ready for swimsuit season.

So, like every woman out there who has been in my “holy cow… summer is right around the corner” shoes, I have dedicated myself to commit to a healthier lifestyle. And, like many women out there, I can only hope that this new found motivation at least gets me through the weekend! So, this weekend menu is for all of you who have vowed to get in swimsuit shape, sooner, rather than later.

Saturday:

Lunch today is going to be Barbecue Ranch Chicken Salad. I like this served as a sandwich, but to make it even lighter, try serving it over a bed of lettuce. As a side, how about this recipe from Light and Tasty magazine for Parmesan Zucchini Spears.

How about a Weight Watchers recipe for Saturday night dinner? This recipe for Chicken Marsala is so yummy you won’t feel like you are sacrificing at all. Full of flavor, rich and delicious, you will want to add this to your regular menu rotation! To go along with your Chicken Marsala, how about trying out this sneaky side dish… Faux Tatoes. You’ll have to take a leap of faith and trust me on this one. It may not sound that great, but Faux Tatoes are so good… even my picky kids, who claim to not like Cauliflower, love Faux-Tatoes.

Sunday:

Sunday morning, skip the pancakes drenched in butter and syrup, and go for this healthy breakfast alternative. You will not find an easier or lighter muffin recipe out there. Pumpkin Muffins may not be in season, but they certainly are in style with our plan for a slender physique!

Dinner tonight is a Pork Loin Roast with a Hoisin-Sesame Sauce. A small slice of this with a nice side salad and some bread will make it a lovely dinner to finish off your weekend with.

I cannot guarantee that my motivation to be good will last a whole lot longer. I love to cook, and bread and desserts are my thing. We’ll see next week how things turn out.

  2. We ended up making these faux-potatoes tonight, and they were great! They turn out creamy, and really do resemble mashed potatoes. Amazing!

    My only change to the recipe, would be to add (much) less garlic. The garlic is raw, so it’s very potent and took over the taste.

    We’ll definitely be making this recipe again and put into regular rotation, just less or no garlic next time (the husband isn’t a huge garlic fan).
