Weekend Menu V
We have had a fabulous week… slipping into the non-routine summer schedule. Summer has started off with a bang, and we have been outside enjoying the rays! I hope you are enjoying some great weather in your neck of the woods as well.
This Saturday is supposed to be one of those perfect, mild, breezy Kansas days. It will be a great day to fire up the grill and spend as much time outside as possible. We are going to have the infamous Beer Can Chicken on Saturday. Have you had this yet? It is one of those recipes that is so popular because it is so easy and results in a moist and tender chicken. As a side, I am going to make the Cucumber Salad with Rice Vinegar Dressing. I gave this recipe a test run this past week, and am making it again with the addition of some red peppers for a pop of color! Oh - and lets not forget dessert. Ice Cream Sandwich dessert is one of those recipes that people think you must have slaved days over, but in reality it was a simple as opening up a couple of boxes of ice cream sandwiches! Make it on Saturday and enjoy it all weekend long.
Sunday is the first day in awhile that we have nothing at all planned…. and the last! I’m going to start of the morning slowly with Cinnamon Flop for breakfast. Quick, easy and delicious, this is one recipe you won’t want to miss! Dinner is going to be light and refreshing with Nantucket Baked Cod. For some reason, summer always brings out the seafood lover in me. Just serve with some fruit and a nice side salad, and you have yourself a great meal.

That Cinnamon Flop sounds like a winner.
So does the Ice Cream Sandwich dessert, although it should really be called Heart Attack on a Plate!

We grilled veggie burgers last night… would have gone great with the cucumbers! Will def. try them out next time.
