Weekend Menu VI
Lately, I have discovered that several of my friends are vegetarian. With this new awareness, I have become more and more interested in their recipes and cuisine. I know I will most likely never become a vegetarian, but having a few meatless meals now and then would be a great change of pace. Many of the recipes this weekend are not tried and true by me, but they have tried by some trusted friends. I hope you enjoy!
Saturday:
In this heat, it is not the best time to have the oven on, but I have always wanted to try Vegetarian Lasagna. I’ll be giving this recipe from Recipezaar a try. I can’t have lasagna of any kind without homemade fresh bread to go along with it. Ted’s Special Mini Loaves is a recipe that creates four of the yummiest loaves of bread. We will have bread all weekend long thanks to this recipe.
I have had a chocolate craving all week long, but haven’t had a whole lot of time to cook. This quick and simple One Pan Fudge Cake contains no eggs or milk, so it is even Vegan friendly! It makes the most moist and delicious cake you will ever eat!
Sunday:
How about a filling veggie stir fry for lunch on Sunday? Quick, easy and full of whatever veggies you want? Substitute vegetable broth for the chicken broth, serve with rice and you have a delicious vegetarian meal!
One of my favorite sandwiches at a local deli is their Grilled Portabella Panini. Sunday night is sandwich night this weekend and Grilled Portabella Panini’s it is!
