Weekend Menu VII
One of my favorite things about summer is the sudden plethora of fresh fruits and vegetables available. It seems like in the summer, we try to eat a little lighter and opt for farm fresh ingredients. This weekend, we have some fresh sweet corn coming our way. I, personally, could live off of corn on the cob this time of the year, but we do have to have more than that. How about incorporating some market fresh ingredients into your menu this weekend?
Friday
We often like to make Friday night’s “appetizers for dinner” night. How about some fresh guacamole and chips? Another favorite, especially for the kids, is Extra Cheesy Crescent Mozzarella Wedges.
Saturday
I am going to get up a little bit early on Saturday and start a loaf of Cinnamon Raisin Swirl Bread. Once it has baked, add some butter… or even better…toast it and you have a yummy breakfast treat!
We are going to have a late lunch on Saturday because we have a baseball game in the late morning and a neighborhood party to go to that night. For a filling, yet quick lunch, we are going to have one of our family staples - Lemon Chicken Spaghetti Toss. Try this… I guarantee you will love how easy and delicious it is! For a side, try this Zucchini Sauté. You cannot beat fresh zucchini this time of year and this recipe is a delicious way to highlight it.
Sunday
I don’t care if you make anything else this Sunday, but you have got to fit in Texas Peach Cobbler somewhere during the day. This is a simple and light (well… until the big fat scoop of vanilla ice cream tops it) dessert that is a great way to use the fresh peaches of the season! I fell in love with this recipe last weekend and could not wait to share it with you all!
