Dishing it Up Weekend Style

I don’t know about you, but things are getting crazy around here! Soccer games, dance recital practice, family birthday parties… this weekend is all about being one hundred different places at once with not a lot of time in between for weekend style lounging. On weekends like this, I like to get the most out of a meal by making one thing that I can use on more than one occasion. That is why this recipe for Lemon and Garlic Roast Chicken is on my weekend menu. Make the chicken last a little longer and have some delicious Chicken Quesadillas for lunch the next day. With this weekend menu, it is all about making things stretch… you can’t stretch the hours in the day, but you can sure make the most of what you do with them!

Saturday

Lunch:
For something quick and delicious, try the Ultimate Steak Sandwich on for size. And, what is a sandwich without some delicious Zesty Oven Baked Fries?

Dinner:
Now is the time for the Lemon and Garlic Roast Chicken. This makes a great sit down meal for your family to recover with at the end of the day. A little work up front will make your lunch tomorrow quick and simple!

As a nice side, try this recipe for Maple Glazed Carrots. Quick, easy and so tasty!

Sunday

Lunch:
For once, on a Sunday after church, avoid spending tons of time in the kitchen. Simply substitute the leftover chicken from Saturday’s dinner for the chicken in this recipe for Black Bean and Chicken Quesadillas, and your work is practically done for you! Just add a few finishing touches, and you can sit down for a nice lunch in no time flat.

Dinner:
Finish off your weekend with something light. With Garlic Lovin’ Salmon for dinner, you have a light and delicious meal on the table in minutes. And, because you were so good at dinnertime, you deserve dessert. Fluffy Chocolate Silk Pie… what a decadent way to end your weekend! Sit down, put your feet up, and just try not to savor every bite. This pie forces you to slow down some and recharge for the hectic week ahead.
